This chilly weather we’ve had the past two days has had me really in the mood for potato soup, so…while Hubby was gone hunting, i whipped up a big ole pot! I didn’t take any pictures, but the recipe is below.
Homemade Potato Soup:
1 large can/box of chicken stock
1 can of Cream of Mushroom soup (do not add water to can of soup!)
1 cup of water
1 small container of sour cream
1/2 cup of milk
1 large bag of frozen hash browns (shredded is best! but diced works as well)
let mix come to a boil, then simmer until the potatoes are done.
Salt/Pepper to taste.
And thats it! Super Easy, and super yummy. I always top mine with shredded cheese and bacon pieces.

I learned to cook from my mom and my grandmothers, and they all cook enough in one sitting to feed an army. I also grew up in a house with at least five people in the house at all times, so we cooked quite large amounts of food. That carried over into my marriage, and when Tyler got tired of eating a week’s worth of chicken and dumplings or yankee doodle (cheesy spaghetti with chicken and rotel), I knew I had to figure something else out.
